Hygiene Officer – Franchise

JOB DESCRIPTION
Job Requirements

·        Monitor and implement HACCP standards across all food production and handling areas.

·        Ensure proper hygiene practices in all kitchens, stewarding, receiving, and storage areas.

·        Inspect raw and cooked food products for quality and safety.

·        Review temperature logs, food storage procedures, and expiry dates regularly.

·        Conduct routine hygiene and sanitation inspections in kitchens, restaurants, back-of-house, and guest areas.

·        Identify areas of non-compliance and recommend corrective actions.

·        Follow up on pest control treatments and coordinate with external vendors when necessary.

·        Train kitchen and F&B staff on food safety, personal hygiene, cross-contamination prevention, and cleaning procedures.

·        Conduct refresher sessions and on health and safety topics.

·        Promote hygiene awareness throughout the hotel.

·        Maintain detailed hygiene audit reports, checklists, and inspection records.

·        Support in preparing for health inspections, internal audits, and third-party assessments.

·        Investigate complaints or incidents related to food hygiene or safety and submit reports.

·        Ensure compliance with local health department regulations and international food safety standards.

·        Stay updated with the latest regulations and industry best practices.

·        Monitor food receiving, storage, preparation, and service to prevent contamination.

·        Ensure proper labelling, expiry checks, and FIFO (First In, First Out) practices.

·        Verify pest control measures are implemented and effective

·        Liaise with Dubai Municipality / Food Control Department during inspections.

·        Work with Chefs, F&B Managers, and Engineering for maintenance and sanitation needs.

Work Experience

– Minimum of 2 years experience in a similar role, preferably in the hospitality industry

– Knowledge of sustainability practices and regulations

– Strong communication and leadership skills

– Attention to detail and ability to multitask

– Ability to work independently and as part of a team

– Certification in hygiene and sanitation is a plus
